Steam Salmon with Soy Lemon Sauce

Ingredients

2 SERVINGS---
1 Lb salmon
4 shiitake mushrooms
1 green onion stalk
3 slices ginger
1 cup chicken stock
6 spears asparagus
4 each artichoke hearts
1 tsp peanut oil
2 TBSP lite soy sauce
1/2 tsp sugar
2 1/2 Tbs lemon juice, divided

Instructions
1. Put scallions (stalk cut in 3 sections) and ginger over salmon.
2. Steam salmon and shiitake mushrooms set on a bowl in Bain Marie until salmon is cooked through and mushrooms are tender, about 8 minutes.
3. Steam asparagus (may be steamed together with salmon on last 3 minutes).
4. Separately, clean artichoke hearts and cook in boiling water. Drain and let cool, then pour 2 Tablesppons of lemon juice over artichoke hearts. Gril artichoke hearts until marked.
5. Place artichoke hearts and mushrooms on plate. Place salmon over vegetables. Save juices
6. Heat oil until almost smoking (do not let smoke or catch on fire). Immediately drizzle over salmon.
7. Sprinkle a pinch of sugar and soy sauce and then finish with 1/2 teasspon of lemon juice
8. Place asparagus on side of plate.
9. Pour some of the saved juices to the salmon and serve..
